RICOTTA STUFFED AVOCADO
1 ripe avocado peeled, halved and pitted
2 tablespoons peeled, chopped cucumber
2 tablespoons part skim ricota cheese (or low fat cottage cheese or light greek yogurt)
1 teaspoon chopped chives and a bit more for garnish
pinch of salt
ground pepper
Place avocado halves on a plate and set aside. In a mixing bowl place the cucumber, add ricota cheese and chives. Stir well and fill the avocado halves. Garnish with chives and ground pepper to taste.
